”Lunch Lady” Brownies | 01.24.16
I’m sure you’ve realized by now that I love to bake. Brownies are always such a perfect treat when you’re craving chocolate and typically you have everything on hand to make them. Now, I will admit that I, just like the next guy, loves a good brownie straight from a box mix. In fact, I have found it quite difficult to find a recipe that rivals those delicious morsels. But this recipe from Life in The Lofthouse is quite wonderful. Very chocolately, very moist and the icing adds the perfect bit of silkiness. I just might add these into my normal dessert rotation!
Yields: 12 large brownies or 24 small brownies ( I halved this recipe and used an 8×8 pan and it worked out great! Just be sure to adjust the cooking temperature accordingly).
Ingredients:
• 1 cup butter, melted
• 1/2 cup unsweetened cocoa powder
• 2 cups all-purpose flour
• 2 cups granulated sugar
• 4 large eggs
• 4 teaspoons vanilla extract
Chocolate Frosting
• 1/4 cup butter, softened
• 1/4 cup milk
• 1/4 cup unsweetened cocoa powder
• 3 cups powdered sugar
Directions:
Step 1: Preheat oven to 350 degrees.
Step 2: Line a 9×13-inch baking dish with foil and spray foil with non-stick spray. Set aside.
Step 3: In a medium bowl, add the melted butter and cocoa powder and blend/mix until smooth.
Step 4: Add the flour and sugar. Beat together then add eggs and vanilla. Mix just until combined. Don’t over mix. (Batter will be thick)
Step 5: Pour batter into prepared baking dish and spread out evenly.
Step 6: Bake 25-30 minutes or until toothpick inserted in center comes out clean. Remove brownies from oven and let stand 15 minutes before frosting. You wan the brownines still warm when you frost them!
Chocolate Frosting:
Step 1: Beat together all the frosting ingredients until smooth.
Step 2: Pour and spread over warm brownies. Let cool completely before cutting and serving.
